Reuben Sandwiches

The below recipe incorporates the traditional American Irish fare of corned beef in a delicious Reuben sandwich. It makes an easy (and delicious) lunch or dinner for St. Patrick’s day!

Reuben SandwichesIngredients (per Sandwich):

2 T. butter

2 slices Rye bread

1 slice Swiss cheese

1/4 lb. thinly-sliced corned beef

2 T. Thousand Island dressing

2 T. sauerkraut (optional)

Directions:

Directions:

1. Melt 2 T. of butter in skillet over medium heat.

2. Toast 2 slices of Rye bread in butter (image 1).

3. When the slices are golden brown on one side, turn them over, sandwich a piece of Swiss cheese between them, and brown the other sides. Add corned beef into the pan to warm (image 2).

4. Once both sides of the bread are golden brown, open the sandwich, add in the meat, Thousand Island dressing and sauerkraut. Cut the sandwich in half (image 3) and serve.
