Honey Glazed Corned Beef

This recipe comes from my dear friend Wendy at wendyspeake.com. Our families love to celebrate St. Patrick’s Day together every year, and we all agree that this sweet alternative to traditional corned beef and cabbage is SO delicious!

Sweet Corned BeefIngredients:

1 pound corned beef brisket

1 cup honey

1/4 cup regular yellow mustard

1/8 tsp. allspice

1/8 tsp. cloves

Directions:

1. Place the corned beef in a large pot, and add enough water to cover the brisket by 4 inches. Bring the water to a boil, and cook the brisket for about 30 minutes at a rolling boil. Reduce the heat to a gentle boil and cover. Cook for 2 1/2 hours. You can also cook the brisket in a crock pot (about 5 hours on high or 8 hours on low).

2. Mix the honey, mustard, allspice and cloves together for your glaze.

3. About an hour before dinner, preheat the oven to 350 degrees.

4. Place the brisket in an oven pan and coat it with the glaze

5. Bake for 30 minutes, basting as it cooks.

6. Allow to set for 10 minutes before slicing.

7. Pour the glaze into a gravy boat and serve with the sliced corned beef. Enjoy!
