Potatoes and Leeks Au Gratin

The below recipe is a delicious (and decadent!) way to serve up the traditional Irish potato!

Potatoes Au GratinIngredients:

3 leek stalks, thinly sliced to the green
1 sweet onion, thinly sliced
2 T. olive oil
1 T. butter
2 lbs. russet potatoes
2 cups + 2 T. heavy cream
2 cups + ½ cup cheddar cheese
1 t. salt
1/8 t. pepper

Directions:

1. Preheat oven to 350 degrees and butter the inside of a 9×13 baking dish.

2. Saute leeks and sweet onion in olive oil and butter until translucent.

3. Peel and thinly slice potatoes.

4. Mix the potatoes in a large bowl with 2 cups heavy cream, 2 cups cheese, salt, and pepper.

5. Mix in the onion mixture, and pour into baking dish.

6. Combine the remaining 2 T. cream and 1/2 cup cheese and sprinkle on top.

7. Bake for 1 1/2 hours or until potatoes are tender and top is brown and bubbly.

8. Allow to set for 10 minutes before serving.
