Cheesy Egg Casserole Recipe

This is my favorite egg casserole. It’s great for an Easter brunch!
Cheesy Egg Casserole Recipe

Ingredients:

1 lb. cooked sausage (crumbled) or ham (cubed)
1/2 c. onion, chopped (or 1 T. minced onion)
1/2 c. green pepper, chopped
1/2 c. red pepper, chopped
2 cups shredded chedder cheese (or your favorite cheese blend)*
3 eggs
1 T. flour
1/4 t. salt
1/2 t. garlic salt
1/4 t. pepper
1 1/2 cups light cream
* I use a Mexican cheese blend.

Directions:

1. Preheat oven to 350 degrees.
2. Cook onions and peppers in 2 T. oil (or sausage grease if you cooked sausage) until slightly tender.
3. Stir in sausage or ham to warm.
4. Place mixture into 1.5 quart baking dish.
5. Sprinkle with cheese.
6. In a medium bowl, beat eggs until well blended. Add remaining ingredients.
7. Pour over cheese and bake for approximately 45 minutes (until a knife comes out clean).
