Christmas Thumbprint Cookie Recipe

Christmas Thumbprint CookiesCookie Ingredients:

1 cup butter, softened
2/3 cup white sugar
1/2 teaspoon almond extract
2 cups flour
1/2 cup raspberry preserves

Lime Filling Ingredients:

1 egg
2/3 cup white sugar
3 T. lime juice
1 1/2 T butter
1 teaspoon cornstarch

Glaze Ingredients:

1/2 cup Powdered Sugar
3/4 teaspoon Almond Extract
1Tablespoon Milk

Directions:

Cookies:

1. Preheat oven to 350.
2. In medium bowl, cream together butter and sugar until smooth.
3. Mix in almond extract.
4. Mix in the flour until combined.
5. Roll dough into 1 1/2” balls, and place on ungreased cookie sheet.
6. Make a small well in the center of each ball using thumb.
7. Fill half with raspberry preserves and the other half with lime filling (see below).
8. Bake for 15 minutes or until lightly browned. Let cool on sheet.

Lime Filling:

1. Beat an egg. Place in saucepan and add remaining ingredients.
2. Cook over low heat, stirring constantly until thick.
3. Allow to cool.

Glaze:

In a small bowl combine powdered sugar, almond extract and milk until smooth. Drizzle over warm cookies.

Makes about 2 dozen cookies.
