Frosted Pumpkin Cookies Recipe

Frosted Pumpkin CookiesCookie Ingredients:

2 1/2 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
2 teaspoons pumpkin pie spice
1 cup butter
3/4 cup sugar
3/4 cup brown sugar, packed
1 egg
1 cup canned pumpkin
2 teaspoons vanilla extract
1/2 cup raisins
1/2 cup walnuts, chopped

Frosting Ingredients:

3 ounces cream cheese
1/4 cup butter
1 teaspoon vanilla extract
2 cups powdered sugar

Directions:

For Cookie:
1. Mix together dry ingredients (flour, baking powder, baking soda, and pumpkin pie spice) in a medium bowl.
2. In a large bowl, beat together butter, sugar, and brown sugar until fluffy. Add egg, pumpkin and vanilla and mix until smooth.
3. Add dry ingredients to butter mixture, and mix until well blended.
4. Stir in raisins and walnuts.
5. Drop by teaspoons 2″ apart on greased cookie sheet. Bake at 350 degrees fro 12-15 minutes (don’t undercook or they will be gooey).

For Frosting:
1. Beat cream cheese, butter and sugar together until fluffy.
2. Gradually add powdered sugar, and beat until smooth.
3. Frost cooled cookies.
