Raspberry Ribbon Coffee Cake Recipe

I love coffee cake, and the raspberry preserves in this one make it extra special for Valentine’s Day. I also like that this recipe incorporates the Valentine’s day colors of red and white. 1 8-ounce package cream cheese
1 cup sugar
1 cup butter
2 eggs
1/4 cup milk
1/2 teaspoon vanilla extract
1 3/4 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup raspberry preserves
Powdered sugar

Directions:

1. In a large mixing bowl, beat cream cheese, sugar and butter with electric mixer on medium speed until fluffy.
2. Beat in eggs, milk and vanilla.
3. Slowly stir in dry ingredients (flour, baking powder, baking soda and salt), then beat with a mixer.
4. Pour and spread into greased 13×9″ pan.
5. Spoon preserves in 8-12 dollops on top of the batter and swirl with a knife for a marbled effect.
6. Bake at 350 degrees for 30-35 minutes.
7. Sift powdered sugar on top and cut into squares.
