Zucchini Bread

Zucchini BreadBread Ingredients:

1 1/2 cups flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon ground nutmeg
1/2 cup oil
1 cup sugar
2 eggs
1 1/2 cups finely shredded unpeeled zucchini
1/2 cup walnuts, chopped (optional)
1 teaspoon vanilla extract
green food coloring (optional)

Frosting Ingredients:

3 ounces cream cheese
1 tablespoon butter
1 teaspoon vanilla extract
2 cups powdered sugar

Directions:

1. In a mixing bowl stir together flour, salt, baking soda, baking powder, and nutmeg. Set aside.

2. Mix together oil and sugar. Beat in eggs. Add vanilla and a few drops of green food coloring (if you want a more green color).

3. Alternate adding flour mixture and zucchini to oil mixture. Stir well.

4. Add nuts and pour into a greased loaf pan. Bake at 350 degrees for 50 to 60 minutes.

5. For frosting, mix together cream cheese, butter and vanilla. Gradually add powdered sugar, and spread over cooled loaf.
