Pistachio Bread

Pistachio BreadBread Ingredients:

1 package white cake mix
1-2 (3.4 oz) pkgs. instant pistachio pudding
4 eggs
1/4 cup vegetable oil
1/4 cup water
1 cup sour cream
green food coloring, optional

Frosting Ingredients:

1/2 cup powdered sugar
1 T. pistachio pudding
2 t. water

Directions:

1. Set aside 1 T. of pistachio pudding for the frosting.

2. Combine all bread ingredients (use 2 pkgs of pudding if you want a stronger pistachio flavor), and blend with electric mixture (30 seconds on low speed and two minutes on medium speed).

3. Add a few drops of green food coloring if you want a darker green color.

4. Pour into greased bundt pan, and bake at 350 for approx. 45 minutes (until toothpick comes out clean).

5. For frosting, mix together ingredients. If necessary, adjust water or sugar to reach desired consistency. Pour over warm loaf.
