Patriotic Potato Salad Recipe

This is a great addition to a July 4th picnic. The red, white, and blue potatoes make it especially patriotic!

Patriotic Potato SaladIngredients:

2 lbs. potatoes  (baby red, yellow, and blue)*
1 cup mayonnaise
2 T. vinegar
1 1/2 t. salt
1 t. sugar
1/4 t. pepper
1/2 cup chopped onion (optional)
2 hard-boiled eggs, chopped (optional)

*I have seen these at most major grocery stores (as well as COSTCO and Trader Joe’s). Make sure to ask if you can’t find them — sometimes they are in the specialty section.

Directions:

  1. Cut potatoes into halves or quarters. Cover with water in a large pot.
  2. Bring the potatoes to a boil over medium-high heat.
  3. Reduce the heat to low and simmer until potatoes are tender, about 10 minutes. Drain and cool slightly.
  4. Combine mayonnaise, vinegar, salt, sugar and pepper in large bowl. Add potatoes, onion and eggs and toss gently.
  5. Chill until ready to serve.
