Creamy Chicken Soup Recipe

Creamy Chicken Soup RecipeIngredients:

2 cups cooked chicken, chopped*
2 (26 oz) cans cream of chicken soup
1 cup carrots, chopped
1 white onions, chopped
5 stalks of celery, chopped
4 russet potatoes, peeled and chopped
1 (14.5 oz) can of diced tomatoes
1 cup (approx.) milk to taste
1 cup (approx.) chicken broth
2 c. cheddar cheese, shredded
Bread Bowl or Biscuits,** optional

* We love to use rotisserie chicken from COSTCO; it is affordable (and oh so tender) and saves you from having to boil chicken.

** We recommend Grand’s Flaky Biscuits.

Creamy Chicken Soup with PumpkinDirections:

1. Chop chicken and vegetables into large pieces.

2. Place chicken, soup, and chopped vegetables in a big pot

3. Warm over medium heat.

4. When warm, add milk and broth to obtain desired consistency (remember it will thicken a bit as it cooks, as well as when you add cheese.

5. Cook until the soup comes to a boil. You can continue to boil for about 45 minutes if you want to serve the soup quickly, or you can turn it down to low and let it simmer all day.

6. Add cheese about 20 minutes before serving, and stir frequently so that it does not burn on the bottom of the pan.

7. Serve in a bread bowl. Or, for a fun Halloween touch, roll out biscuits to about a 5″ diameter. Carve out a pumpkin face and cook according to package directions. Place on top of soup.
