Tortellini Soup Recipe

The below recipe incorporates the Christmas colors of red and green. It is very easy to make and wonderfully flavorful. Visit our Christmas Symbols page to learn more about the symbolism and meaning of red and green at Christmas.

tortellini soupIngredients:

Olive oil
4 cloves garlic, chopped
1 teaspoon dried oregano
1 teaspoon dried basil
1 pound italian sausage*
49 ounce can chicken broth
2 cans stewed italian tomatoes
1 package frozen chopped spinach
1 pound tortellini, meat or cheese
Parmesan cheese

Directions:

1. In a large sauce pan or Dutch oven, place about 2 tablespoons of olive oil. Saute chopped garlic, oregano and basil. Cook until lightly browned.

2. Add the sausage to the pan (make sure to remove casing) and saute until cooked through. Make sure to cook well, because the tomato juice with turn the sausage a pink color (so you want to be confident that it was thoroughly cooked!).

3. Add chicken broth and stewed tomatoes (you may want to chop these if you don’t want big hunks of tomato in your soup); then simmer 20 minutes.

4. Add drained spinach and tortellini to soup. Boil until tortellini is puffy and soft (5-10 minutes).

5. Ladle soup into bowls and top with parmesan cheese.

* Turkey Sausage is a great alternative.
