Teriyaki Salmon w/ Sugared Almonds

This is my absolute favorite salmon recipe. Who would have known that salmon is so good when it is marinated in teriyaki sauce? I like that the salmon is a lovely pink color, and the sugared almonds add a special touch to complete an elegant meal that is perfect for Valentine’s Day. I like this recipe best with Asian white rice, and you can form it into a heart shape for Valentine’s Day.  Visit our Valentine’s Day Symbols page to learn more about the symbolism and meaning of hearts, as well as the color pink, for Valentine’s Day.

Teriyaki SalmonIngredients:

1-2 lb. salmon filet*

1/2 cup teriyaki sauce

1 cup slivered almonds

1/4 cup sugar

Asian white rice

*COSTCO Atlantic salmon is delicious.

Directions:

1. Marinate salmon in teriyaki for about 30 minutes.

2. Warm slivered almonds in a pan over medium heat. Add sugar and stir until sugar becomes a golden brown liquid and begins to coat almonds. Pour almonds onto aluminum foil and allow to cool (sugar will harden).

3. Preheat oven to 350 degrees.

4. Bake salmon in a well greased pan (about 15 minutes per pound).

5. Prepare Asian rice according to package directions.

6. Form rice into a heart shape and top with salmon. Sprinkle with almonds.

7. Enjoy!
