Red Mashed Potatoes Recipe

I first tried mashed potatoes with skin at the Cheesecake Factory. They were so good, and I knew that the skin of the potato made them extra healthy. I like that the red skin makes these a great option as a side dish for Valentine’s Day. mashed red potatoesIngredients:

2 lbs. red potatoes
1/4 cup butter
1/4 cup milk
1/4 t. salt

Directions:

1. Wash potatoes (leave on the skin), cut in quarters and boil until tender (about 30 minutes).

2. Drain potatoes, and use electric mixer to blend in butter, milk and salt (adjust if necessary to obtain proper consistency).
