Twice Baked Red Potatoes Recipe

4 lbs. red potatoes
1/4 cup butter
1/4 cup milk
1/4 t. salt
cheddar cheese, shredded
bacon bits
sour cream

Twice Baked Potato with Sour Cream HeartDirections:

1. Preheat oven to 350 degrees.

2. Wash potatoes and place in a baking pan. Poke holes in the potatoes with a fork and bake for about an hour (until a fork pokes into them easily). If you need them to cook more quickly, you can increase the temperature of the oven to 400 degrees.

3. When the potatoes are done, remove from oven (and adjust oven temperature to broil). Cut in half, then use a knife to cut about 1/4″ from the edge (see step 1 image).

4. Scoop out the potato with a spoon (see step 2 image). Use an electric mixer to blend potato, butter, milk and salt (adjust if necessary to obtain proper consistency).

5. Place potato mixture back into the skin (see step 3 image). Sprinkle with cheddar cheese and bacon bits. Return to oven and broil until cheese in melted (for about 5 minutes).

6. For a fun garnish, you can place sour cream in a ziploc bag. Cut off one corner tip and pipe a heart shape onto the potato (see step 4 image).

7. Enjoy!
