Mint Chip Pancakes

The below recipe incorporates the St. Patrick’s Day color of green. Visit our St. Patrick’s Day Symbols page to learn more about the symbolism and meaning of green for St. Patrick’s Day.

We use a Bisquick recipe, but feel free to use your own favorite pancake recipe and just add green food color, mint extract and chocolate chips.

Mint Chip PancakesIngredients:

2 cups Original Bisquick®
1 cup milk
2 eggs
1 tablespoon sugar
1 tablespoon lemon juice
1 teaspoon baking powder
1 teaspoon vanilla extract
1 teaspoon mint extract
1/4 teaspoon green food coloring
1/2 cup chocolate chips

Garnish with whipped cream and chocolate syrup (the kind you use for ice-cream).

Directions:

1. Stir together all ingredients (except chocolate chips) until well blended.

2. Add chocolate chips.

3. Grease a griddle with butter and pour batter (about 1/4 cup) in circles on it.

4. Flip pancakes when they are bubbly on top and edges are dry.

5. Garnish with whipped cream and chocolate syrup (the kind you use for ice-cream).
