Easter Bunny Cake Recipe

Impress your kids with this fun and easy Easter bunny cake. It has a delicious fluffy and creamy coconut frosting. Enjoy!
Easter Bunny Cakes

Cake Ingredients:

1 box white cake mix
1 (3 1/2 oz.) box instant vanilla pudding
1 cup sour cream
1/2 cup water
1/3 cup oil
4 egg whites
1 t. coconut extract (optional)

Frosting Ingredients:

1 cup sour cream (not low fat)*
2 cups sugar
1 (14 oz.) pkg. flaked coconut, divided
1 (8 oz.) container frozen whipped topping, thawed (not low fat)*

Decorations:

Large and small marshmallows
Pink small stick gum
Chocolate chips
Pink jelly beans

*Low fat sour cream and/or whipped topping turns runny when mixed with sugar, so make sure to use regular sour cream.

Directions:

1. Heat oven to 350 degrees.

2. Mix cake ingredients and beat on low speed for 30 seconds, then on medium speed for 2 minutes (scraping bowl occasionally with a rubber spatula).

3. Pour cake mix into two 9″ round pans, and bake for approximately 30 minutes (until a toothpick inserted in the center comes out clean).

4. For frosting, mix together sour cream, sugar, coconut (reserve  1 1/2 cup coconut to sprinkle on top of frosted cake) — you will add the whipped topping later.

5. If you want toasted coconut on your bunny, toast the reserved coconut in a 350 degree oven for 10-12 minutes.

6. Once cakes are completely cooled, cut each one in half (so you will have 4 half moons).

Bunny Cake Front7. Frost half of each cake (step 1), then top with the other half (step 2).

Bunny Cake Back8. Turn each cake on its side and cut a small dip in one side (step 3) to form a head and body.

9. Mix the remaining frosting with the whipped topping, and frost the cakes completely.

10. Sprinkle with remaining coconut (pressing it in with the back side of a spoon if necessary).

11. To make ears, cut a large marshmallow diagonally. Round the edges of two pieces of gum and place on the sticky side of the marshmallow. Set the ears in place.

12. To make the face, cut a large marshmallow in half for cheeks, use two small marshmallows for teeth, use the flat side of two chocolate chips for eyes, and use a pink jelly bean for a nose. You can also place a large marshmallow in back for a tail and cut two large marshmallows diagonally for feet.
