Praline Carrot Souffle Recipe

The below recipe makes a great side dish for an Easter dinner. It also incorporates the well-known food of the Easter Bunny — carrots. Visit our Easter Symbols page to learn more about the symbolism and meaning of the Easter bunny.

Praline Carrot Souffle

Ingredients:

2 lbs. cooked carrots
6 eggs
2/3 cup sugar
6 T. flour
2 t. vanilla extract
1 c. butter, melted
dash nutmeg

Topping Ingredients:

1/4 cup butter, softened
6 T. brown sugar
1/2 cup pecans, chopped

Directions:

1. Blend the cooked carrots and eggs in a blender (not a food processor).

2. Add remaining ingredients and blend again.

3. Pour into baking dish and bake at 350 degrees for 40 minutes.

4. Mix together topping ingredients, sprinkle on top, and bake another 10 minutes.
