Cherry Cheesecake Cookies

cherry cheesecake cookiesIngredients:

1/4 cup butter, softened
1 (8 oz) pkg. cream cheese , softened
1 egg
1/4 teaspoon vanilla extract
1 package white cake mix
¾ cup maraschino cherries, chopped

Directions:

1. Chop maraschino cherries, and place on a paper towel to absorb excess juice.
2. Cream together butter and cheese with electric mixer until smooth.
3. Add in egg and vanilla.
4. Add cake mix 1/3 at a time. If mixture is too heavy for mixer, use hands to “knead” in the cake mix.
5. Add cherries to batter.
6. Wrap in plastic wrap, and chill for 30 minutes.
7. Drop batter in lumps (the mixture may be a bit sticky) 2” apart on lightly greased cookie sheet.
8. Bake at 375 degrees for 7-9 minutes. Cool slightly before removing from baking sheet.
