Twice Baked Red Potatoes Recipe
The below recipe incorporates the Valentine’s day colors of red and white and makes a yummy side dish. Visit our Valentine’s Day Symbols page to learn more about the symbolism and meaning of red and white for Valentine’s Day.
Ingredients:
4 lbs. red potatoes
1/4 cup butter
1/4 cup milk
1/4 t. salt
cheddar cheese, shredded
bacon bits
sour cream
Directions:
1. Preheat oven to 350 degrees.
2. Wash potatoes and place in a baking pan. Poke holes in the potatoes with a fork and bake for about an hour (until a fork pokes into them easily). If you need them to cook more quickly, you can increase the temperature of the oven to 400 degrees.
3. When the potatoes are done, remove from oven (and adjust oven temperature to broil). Cut in half, then use a knife to cut about 1/4″ from the edge (see step 1 image).
4. Scoop out the potato with a spoon (see step 2 image). Use an electric mixer to blend potato, butter, milk and salt (adjust if necessary to obtain proper consistency).
