Manicotti Recipe

The below recipe incorporates the Christmas colors of red and green and is a crowd pleaser (even with spinach inside!). Visit our Christmas Symbols page to learn more about the symbolism and meaning of red and green at Christmas.

manicottiIngredients:

16 manicotti noodles
1 pound ground beef
10 ounces frozen chopped spinach
3/4 cup ricotta cheese
1/2 cup shredded mozzarella cheese, divided
1/2 cup grated parmesan cheese, divided
1 can (26 oz) spaghetti sauce*
* We like Prego.

Directions:

1. Cook manicotti according to package directions (should be al dente). Set aside.
2. Cook ground beef in saucepan until brown, and drain off grease. Set aside.
3. Cook spinach according to package directions, and drain.
4. Mix beef, spinach, ricotta, and HALF of each mozzarella and parmesan.
5. Stuff manicotti with filling.
6. Cover bottom of 13×9″ pan with 1/2 of spaghetti sauce and place manicotti on top.
7. Top with remaining sauce and then sprinkle with remaining mozzarella and parmesan.
8. Cook 15-20 minutes at 375 degrees.
